Fit and Fab Friday: Healthy Flavorful Chicken Nuggets

Today on the blog is a healthy Chicken Nugget Recipe! Ingredients:

  1. 4 skinless, boneless, chicken breasts

  2. ¾ cup Whole Wheat Panko

  3. ¾ cup egg whites

  4. ¼ cup ground flaxseed

  5. 4 Tbsp. mesquite or barbeque spice (McCormick Sweet and Smokey is a good one)

  6. 1 Tbsp. Mrs. Dash Italian Spice

  7. ½ cup whole wheat flour

  8. ½ tsp. garlic powder

  9. Olive oil spray or spritzer

Directions:

  1. Combine Panko, flaxseed, mesquite or barbecue spice, Italian spice, whole wheat flour, and garlic powder in bowl and mix together


  1. Pour egg whites in a separate bowl


  1. Wash chicken and cut into small pieces


  1. Spray or spritz olive oil onto a foil covered cookie sheet pan


  1. Coat chicken in egg whites then in the panko mixture and place in a plastic bag


  1. After all chicken is in a plastic bag pour remaining panko mixture in bag and shake


  1. Place chicken nuggets onto the olive oil baking sheet


  1. Cook at 350 degrees for about 15-18 minutes or until fully cooked.
