Fit and Fab Friday: Healthy Flavorful Chicken Nuggets

Today on the blog is a healthy Chicken Nugget Recipe! Ingredients:
4 skinless, boneless, chicken breasts
¾ cup Whole Wheat Panko
¾ cup egg whites
¼ cup ground flaxseed
4 Tbsp. mesquite or barbeque spice (McCormick Sweet and Smokey is a good one)
1 Tbsp. Mrs. Dash Italian Spice
½ cup whole wheat flour
½ tsp. garlic powder
Olive oil spray or spritzer
Directions:
Combine Panko, flaxseed, mesquite or barbecue spice, Italian spice, whole wheat flour, and garlic powder in bowl and mix together
Pour egg whites in a separate bowl
Wash chicken and cut into small pieces
Spray or spritz olive oil onto a foil covered cookie sheet pan
Coat chicken in egg whites then in the panko mixture and place in a plastic bag
After all chicken is in a plastic bag pour remaining panko mixture in bag and shake
Place chicken nuggets onto the olive oil baking sheet
Cook at 350 degrees for about 15-18 minutes or until fully cooked.
